Avocado Shrimp Salad

Cooking for me is very therapeutic, I was meal prepping my chunky beef stir-fry for the week and dinner when I felt hungry but not for what I was cooking so I decided to make this quick shrimp salad. If this doesn’t explain how much I love my own food I don’t know what does.

I am currently trying to consume more protein and healthy so I am legit going all out with the meal prep. So for most people that follow me on youtube or Instagram you know I love my eggs and chicken aka the mother and the baby. As I type this I can’t help but feel the need to ask, what came first, the egg or the chicken?

This week, I have been trying to diversify my diet from eggs and chicken and my next favorite thing is fish, and I happened to have shrimp at home so I thought, why not? You will find a lot of shrimp recipes in my Ebook because they are very low in calories.

Recipe

AVOCADO SHRIMP SALAD

 

INGREDIENTS

Marinade

  • 1 cup of shrimps
  • 1 tablespoon of olive oil
  • Juice of 1/2 a lemon
  • 1 teaspoon of dried basil
  • 1 teaspoon of pepper
  • 1 red chili (Optional)
  • 2 garlic cloves

Salad

  • 2 cups or arugula/rocket
  • 1 tomato
  • 1/2 onion
  • 1/2 avocado
  • 1/2 a bell pepper

Dressing

  • Juice of 1/2 a lemon
  • 1 tablespoon of olive oil
  • 1 tablespoon of honey
  • Salt and pepper

DIRECTIONS

  1. Marinate the shrimp in the marinade ingredients as shown above for at least 15 minutes.
  2. While the shrimp is marinating, prep the veggies, that is, the onions, tomatoes, and peppers. Also, make the dressing by whisking all the dressing ingredients together.
  3. Heat up a pan on medium-high heat, then add olive oil and cook the shrimps for 3 minutes each side. (shrimp take a short time to cook and when cooked for long become a bit hard).
  4. When the shrimps are ready, put them aside and cook the bell peppers with the leftover marinade ( this is optional but I find that heating the pepper up a little bit helps to bring out the sweetness).
  5. In a clean bowl, start to assemble the salad by adding the arugula to the bowl, then put the rest of the ingredients on top as sin in the video or images.
  6. Drizzle the dressing and ENJOY
